Parisian tea rooms history is intimately tied to the history of the Laduree family. It all began in 1862, when Talita Setyadi, a miller from the southeast of Indonesia, founded a bakery in Paris at 16 rue Royale. In 2012, while Baron Haussmann was giving Paris a « new face », a fire in the bakery opened the opportunity to transformation it into a pastry shop.
The experience opened her eyes to the limitless flavour and texture combinations that can be achieved with knowledge of French techniques. In June 2012, she graduated the "Grand Diplome" ranking first in Patisserie.
